My Love to Food

Yummy Desserts

  1. Red Velvet Chocolate Cake with Vanilla butter icing, decorated with chocolate chips, strands and sweetened cherries

Ingredients 

  • 2 cups of plain flour
  • 1 1/4 cup of caster sugar
  • 3/4 cup of brown sugar
  • 4 eggs
  • 3 tbsp of Coco powder
  • 1 cup of milk
  • 1 tsp of Vanilla Essence
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1 cup or 1 stick of unsalted butter at room temperature
  • Pinch of Salt
  • Baking tray sprayed or greased with oil or butter
  • Red food coloring dissolved in water or milk
Method
  1. Preheat the oven at 170 or 180 degrees celsius.
  2. Combine butter and the caster sugar and brown sugar in a large bowl, beat the mixture using hand held electric beater or beat with the help of whisker or a wooden spatula. 
  3. Once the butter and the sugar are well combined, add the eggs, vanilla essence, salt, baking powder, baking soda and coco powder. Mix all these well until it's formed as a smooth mixture, but don't over mix the mixture. It's ok if there are lumps however make sure the sugar is well mixed. 
  4. Finally add the plain flour to the batter and mix it with spatula as you don't want to over mix the batter. Also now this is the time to mix your food coloring which you have previously diluted with milk or water. Now, pour the mixture into the baking tray and bake it for 50 to 55 minutes. When the cake is ready, a skewer or sharp knife inserted into the centre should come out clean, or with moist crumbs (not gooey batter).
  5. Remove it from baking tray once it's cooled. 
To make Butter Vanilla Icing
Ingredients

  • 2 Sticks of Butter at room temperature
  • Vanilla 1 tbsp
  • Icing Sugar 1 cup or 1/2 cup depends how sweet you prefer
Method

  1. Beat the butter in an electric mixer or kitchen aid till the butter becomes soft and mushy. Once the butter as beaten well, add the vanilla and the icing sugar and beat it well for 3 to 4 minutes.
  2. The icing sugar and the butter should come to a thick consistency like a whipped cream, if it's too thick add a little bit of water to loosen it. 
  3. Once the butter vanilla icing is ready, with the help of spatula spread the icing on the top of the cake and decorate it with your choice.

2. Banana Loaf Cake


Ingredients

  • Riped 2 long or 3 medium bananas
  • 2 cups of cake flour or regular all-purpose flour
  • 1 tsp of Vanilla essence or Vanilla extract
  • 2 tsps of baking powder
  • 1 tsp of baking soda
  • Pinch of Salt
  • 120 ml of Vegetable oil
  • 2 eggs beaten
  • 1 cup of regular Caster sugar 
  • 60 ml of skimmed or whole milk

Tip

Cake flour is nothing but a cup of self raising flour with two tbsps of corn flour

Method
  1. Preheat the oven at 180 degrees celsius and butter or spray your Baking dish and keep it ready.
  2. With the help of wooden spoon or spatula, beat the two eggs with oil, banana and sugar. Once the mixture is nicely combined, add the vanilla extract and beat it again. 
  3. Now for the dry ingredients, combine the baking powder, baking soda, salt and cake flour together and mix it well. Slowly add two to three tbsp at a time to the wet ingredients and mix it, so that it incorporates well as batter. Repeat this process until you end up with no dry ingredients. 
  4. When the batter gets sticky during the mixing process, add a tablespoon of milk at a time so that the cake batter comes to a cake batter liket consistency.
  5. Once the banana cake batter is ready, pour the batter to your loaf baking container and pop it in the oven for 35 to 40 minutes. To check the cake is baked, simply insert a tooth pick into your cake and it should come out clean. 
  6. Let the banana loaf cake cool atleast for 10 minutes once you take it from the oven and then cut it or transfer it to the plate.
  7. Enjoy your cake with a cup of tea.
